Ingredients

For the Zucchini Fries

  • 2 medium zucchini (about 1 pound or 450g total)
  • 1 teaspoon fine sea salt (for drawing out moisture)
  • 1 large egg
  • 1 tablespoon heavy cream or unsweetened almond milk
  • ¾ cup finely ground blanched almond flour
  • ½ cup finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano or Italian seasoning
  • ¼ teaspoon black pepper

For the Optional Spicy Aioli Dip

  • ½ cup mayonnaise (avocado oil-based is a great keto option)
  • 1 tablespoon sriracha or other sugar-free hot sauce
  • 1 teaspoon lime juice
  • 1 clove garlic, minced
  • Pinch salt

Instructions 

  • Rinse and dry zucchini, then cut into ½-inch spears.
  • Sprinkle with salt and let sit for 20-30 minutes to draw out moisture.
  • Pat dry, then dip in egg wash and coat with almond-Parmesan mixture.
  • Preheat air fryer to 400°F (200°C). Arrange fries in a single layer, spray with oil, and cook for 10-14 minutes, flipping halfway.
  • Serve hot with optional spicy aioli dip.

Notes

Ensure fries are dry before breading for maximum crispiness.
