Mushrooms

  • 500 g fresh mushrooms (shiitake, cremini, or button)
  • 3 tablespoons miso paste (white or red)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • to taste chili flakes (optional) (for extra heat)

Instructions 

  • Wipe mushrooms with a damp cloth to remove dirt.
  • Slice mushrooms into uniform pieces.
  • Heat sesame oil in a skillet over medium heat.
  • Sauté garlic and ginger until fragrant, then add mushrooms and cook until tender.
  • Mix miso paste and soy sauce with warm water, then pour over mushrooms and cook briefly.
  • Garnish with green onions and sesame seeds, then serve warm.

Notes

For best flavor, avoid rinsing mushrooms under water.
