  • 1 cup Ground Pistachios (Can substitute with ground almonds or sunflower seeds)
  • 2 cups Almond Flour (Can swap with coconut flour, reduce to 1 cup)
  • 1 teaspoon Vanilla Extract (Use pure extract for best results)
  • 1/2 teaspoon Baking Soda (Ensure it's fresh)
  • 1/2 cup Fresh Orange Juice (Can substitute with lemon juice)
  • 2 tablespoons Honey (Creates a syrupy consistency)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a cake pan.
  • Blend oranges until smooth, then mix with eggs, honey, vanilla, and orange juice.
  • Combine ground pistachios, almond flour, and baking soda; fold into wet mixture.
  • Pour batter into prepared pan and bake for 40 minutes or until a toothpick comes out clean.
  • Mix honey with a little orange juice to make glaze; drizzle over cooled cake.
