Ingredients

  • 2 large oranges (Fresh, high-quality oranges recommended for best flavor.)
  • 1 cup ground almonds (Weigh for accuracy, as almond sizes can vary.)
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup olive oil (or melted butter)
  • Powdered sugar for dusting Powdered sugar (optional)

Instructions 

  • Preheat the oven to 350°F (175°C). Grease a cake pan.
  • Boil the oranges for 30 minutes, then blend until smooth.
  • Mix orange puree, ground almonds, sugar, eggs, baking powder, salt, and olive oil until well combined.
  • Pour batter into the prepared pan and bake for 45 minutes or until a toothpick comes out clean.
  • Allow to cool, then dust with powdered sugar if desired.

Notes

This cake is best enjoyed fresh but can be stored in an airtight container for up to 2 days.
