A delightful coffee cake combining tangy lemon, creamy Greek yogurt, and a buttery crumb topping for a perfect treat.

Ingredients

Cream Cheese Mixture

  • 8 oz greek yogurt cream cheese, softened (or plain cream cheese)
  • 0.25 cup granulated sugar
  • 1 egg egg
  • 1.5 tsp freshly squeezed lemon juice
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt

Crumb Topping

  • 0.5 cup vegetable oil
  • 0.75 cup sugar
  • 1 egg egg
  • 0.5 cup greek yogurt
  • Zest from 1 lemon lemon zest
  • 1 tbsp lemon juice (use extra for more lemon flavor)
  • 0.5 cup flour
  • 0.25 cup sugar
  • 2 tbsp unsalted butter, cold and cubed

Powdered sugar

  • for dusting powdered sugar (for dusting)

Instructions 

  • Preheat oven to 350°F (175°C). Prepare the crumb topping by mixing flour, sugar, and cold butter until crumbly.
  • In a bowl, beat together Greek yogurt cream cheese, sugar, egg, lemon juice, and lemon zest until smooth.
  • Combine dry ingredients and add to the yogurt mixture. Mix until just combined.
  • Pour batter into a greased baking pan, sprinkle crumb topping on top, and bake for 35 minutes.
  • Allow to cool, then dust with powdered sugar before serving.

Notes

For extra lemon flavor, add more lemon juice or zest as desired.
