A delicious and healthy baked dish combining fresh vegetables, cottage cheese, and melted cheese for a satisfying meal.

Ingredients

Vegetables

  • 2 medium zucchini (sliced)
  • 1 cup spinach (chopped)
  • 1 red bell pepper red bell pepper (diced)
  • 1 cup cherry tomatoes (halved)

Dairy & Cheese

  • 1 cup cottage cheese (fresh, room temperature)
  • 2 large eggs
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • to taste salt salt
  • to taste pepper pepper

Garnish

  • optional fresh basil or parsley (for garnish)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Toss zucchini, bell pepper, and cherry tomatoes with olive oil, oregano, garlic powder, salt, and pepper. Roast for 15 minutes.
  • Whisk cottage cheese, eggs, and half of mozzarella until smooth.
  • Arrange roasted vegetables in a greased dish, pour cheese mixture over, top with remaining mozzarella and Parmesan, then bake for 30–35 minutes.
  • Let rest for 10 minutes, garnish with herbs if desired, then serve.

Notes

Use fresh vegetables for best flavor and texture.
