Ingredients
Bell Peppers

bell peppers (red and green), halved lengthwise and seeded

ground beef

cooked rice (white or brown)

onion, diced

diced tomatoes (fresh or canned)

diced green bell pepper (from tops or extra)

cup
corn kernels (optional)

garlic powder

Italian seasoning
Salt & black pepper to taste

shredded mozzarella

shredded cheddar

olive oil
Instructions
Preheat oven to 375°F (190°C).
Sauté beef and onion in olive oil until browned; add tomatoes, peppers, corn, rice, garlic, seasoning, salt, and pepper. Simmer 5–7 mins.
Fill halved peppers with beef mixture and place in baking dish.
Top with mozzarella and cheddar cheeses.
Cover with foil, bake 25 mins; uncover and bake 10 mins until golden.
Notes
For extra flavor, garnish with fresh parsley or a dollop of sour cream.
