Ingredients

Bell Peppers

  • 4 large bell peppers (red and green), halved lengthwise and seeded
  • 1 lb ground beef
  • 1 cup cooked rice (white or brown)
  • 1 small onion, diced
  • ½ cup diced tomatoes (fresh or canned)
  • ½ cup diced green bell pepper (from tops or extra)
  • ½ cup corn kernels (optional)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste Salt & black pepper
  • 1 cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 tbsp olive oil

Instructions 

  • Preheat oven to 375°F (190°C).
  • Sauté beef and onion in olive oil until browned; add tomatoes, peppers, corn, rice, garlic, seasoning, salt, and pepper. Simmer 5–7 mins.
  • Fill halved peppers with beef mixture and place in baking dish.
  • Top with mozzarella and cheddar cheeses.
  • Cover with foil, bake 25 mins; uncover and bake 10 mins until golden.

Notes

For extra flavor, garnish with fresh parsley or a dollop of sour cream.
