A hearty and nutritious cabbage soup made with ground beef, perfect for a quick and satisfying meal.

Ingredients

Oil

  • 2 tbsp avocado oil (or your favorite cooking oil)

Vegetables

  • 1 small onion (diced)
  • 4 cloves garlic (minced)
  • 1 lb ground beef

Seasonings

  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 1 tsp dried oregano

Vegetables

  • 3 carrots carrots (chopped)
  • 3 stalks celery (chopped)

Cabbage

  • 5 cups chopped green cabbage (about 1/2 medium cabbage)

Broth

  • 4 cups bone broth (or beef broth)
  • 28 oz can of diced tomatoes

Instructions 

  • Set Instant Pot to sauté and heat the oil.
  • Add diced onion and minced garlic; cook until fragrant, about 2 minutes.
  • Add ground beef and cook until browned, then drain excess fat if needed.
  • Add chopped carrots, celery, cabbage, diced tomatoes, broth, salt, pepper, and oregano. Stir well.
  • Close lid, set to manual high pressure for 10 minutes, then release pressure naturally.
