A refreshing and creamy iced vanilla latte perfect for a quick pick-me-up. Made with homemade vanilla syrup and your favorite milk, it's easy to customize.

Ingredients

Vanilla Syrup

  • 1 cup cane sugar
  • 1 cup water
  • 2 tbsp vanilla extract or vanilla bean, sliced in half lengthwise (see notes)

Espresso

  • 2 shots espresso

Ice

  • as needed ice

Milk

  • ½-1 cup milk (oat milk recommended)

Vanilla Syrup

  • 1-2 tbsp vanilla syrup

Garnish

  • optional whipped cream and rainbow sprinkles (coconut milk whipped cream used)

Instructions 

  • Make vanilla syrup by boiling sugar and water until dissolved, then add vanilla extract or vanilla bean and simmer for a few minutes. Let cool.
  • Prepare espresso shots and let them cool slightly.
  • Fill a glass with ice, pour in vanilla syrup, then add espresso and milk.
  • Stir gently to combine, then top with whipped cream and sprinkles if desired.

Notes

Adjust vanilla syrup and milk to taste for a sweeter or creamier latte.
