A creamy, flavorful Middle Eastern dip made from chickpeas, tahini, lemon, and garlic, perfect for snacking or serving with bread.

Ingredients

Main ingredients

  • 2 cans chickpeas (15 oz cans, drained and rinsed, skins removed (optional), some reserved for garnish)
  • 0.25 cup reserved chickpea liquid
  • 0.25 cup tahini
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon juice
  • 0.75 teaspoon sea salt
  • 3 cloves garlic
  • 0.33 cup olive oil (plus extra for drizzling)
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon paprika

Garnish and serving

  • chopped parsley (for garnish)
  • pita bread wedges or chips to serve pita bread wedges or pita chips (or a combo of both)

Instructions 

  • Add chickpeas, reserved liquid, tahini, lemon juice, salt, and garlic to a food processor; blend until smooth.
  • Slowly drizzle in olive oil while processing until creamy, about 4-5 minutes.
  • Transfer hummus to a serving dish and keep at room temperature or chilled.
  • Before serving, swirl the hummus, sprinkle with cumin and paprika, drizzle with olive oil, add chickpeas, and garnish with parsley. Serve with pita or chips.

Notes

For extra flavor, roast garlic beforehand or add a pinch of cayenne for heat.
