Ingredients

For the salmon and glaze

  • 1.5 pounds salmon fillets (cut into 4 portions (skin-on or skinless))
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon smoked paprika (optional)
  • 1/3 cup hot honey (or honey + hot sauce)
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon rice vinegar or lime juice
  • 1 teaspoon grated fresh garlic
  • 1 teaspoon grated fresh ginger (optional but great)

For the bowls

  • 3 cups cooked rice (jasmine, brown, or sushi rice)
  • 1 cup cucumber, thinly sliced
  • 1 cup shredded carrots or carrot ribbons
  • 1 avocado sliced
  • 2 scallions thinly sliced
  • 0.25 cup fresh cilantro or mint, chopped (optional)

For garnishing

  • Lime wedges for serving
  • Sesame seeds or everything bagel seasoning for garnish (optional)

Instructions 

  • Cook the rice according to package instructions and keep warm.
  • Whisk together hot honey, soy sauce, rice vinegar, garlic, and ginger to make the glaze.
  • Pat salmon dry, season with olive oil, salt, pepper, and paprika. Broil, sear, or air fry until cooked through, brushing with glaze during cooking.
  • Assemble bowls with rice, salmon, cucumbers, carrots, and avocado. Drizzle with extra glaze and garnish with scallions, herbs, sesame seeds, and lime wedges.

Notes

Adjust hot honey for desired sweetness and spice level.
