Ingredients
For the salmon and glaze
1.5poundssalmon fillets(cut into 4 portions (skin-on or skinless))
2tablespoonsolive oil
1teaspoonkosher salt
0.5teaspoonblack pepper
0.5teaspoonsmoked paprika (optional)
1/3cuphot honey (or honey + hot sauce)
1tablespoonsoy sauce or tamari
1tablespoonrice vinegar or lime juice
1teaspoongrated fresh garlic
1teaspoongrated fresh ginger (optional but great)
For the bowls
3cupscooked rice (jasmine, brown, or sushi rice)
1cupcucumber, thinly sliced
1cupshredded carrots or carrot ribbons
1avocadosliced
2scallionsthinly sliced
0.25cupfresh cilantro or mint, chopped (optional)
For garnishing
Lime wedgesfor serving
Sesame seeds or everything bagel seasoningfor garnish (optional)
Instructions
Cook the rice according to package instructions and keep warm.
Whisk together hot honey, soy sauce, rice vinegar, garlic, and ginger to make the glaze.
Pat salmon dry, season with olive oil, salt, pepper, and paprika. Broil, sear, or air fry until cooked through, brushing with glaze during cooking.
Assemble bowls with rice, salmon, cucumbers, carrots, and avocado. Drizzle with extra glaze and garnish with scallions, herbs, sesame seeds, and lime wedges.
