Ingredients

Protein

  • 1 lb chicken tenderloin
  • ½ tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • ½ tsp black pepper
  • 200 g all-purpose flour
  • 100 g cornstarch
  • 1 tsp baking powder
  • 2 Tbsp garlic powder
  • 2 Tbsp onion powder
  • 2 tsp smoked paprika
  • 2 tsp cayenne pepper
  • 4 Tbsp seasoned flour (reserved from above)
  • 1 egg egg
  • 50 ml water
  • 3 Tbsp Frank’s hot sauce
  • ½ cup Frank’s hot sauce
  • ½ cup honey
  • ½ stick butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp brown sugar
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • ¼ tsp salt
  • 1 cup mayonnaise
  • cups buttermilk
  • 2 packets Hidden Valley Ranch seasoning

Instructions 

  • Mix seasonings, coat chicken, and let rest.
  • Prepare batter with flour, cornstarch, baking powder, and seasonings.
  • Dredge chicken in flour, dip in wet batter, then coat again. Rest for 10-15 mins.
  • Fry chicken at 350°F (175°C) until golden, then second fry for extra crispiness.
  • Make hot honey sauce, brush over fried chicken, and toss with dry rub. Serve with ranch dressing.

Notes

Ensure oil temperature remains steady for crispy coating.
