  • 1 pound boneless, skinless chicken thighs
  • 1/4 cup hot honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 cups cooked jasmine rice
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1/2 cup green onions, chopped

Instructions 

  • Cut chicken into bite-sized pieces and season with salt and pepper.
  • Whisk hot honey, soy sauce, rice vinegar, minced garlic, and grated ginger in a bowl.
  • Cook chicken in olive oil until browned and cooked through, about 7-10 minutes.
  • Pour sauce over chicken, stir to coat, and simmer for 5 minutes until thickened.
  • Steam broccoli for 5 minutes until tender. Assemble bowls with rice, chicken, broccoli, and peppers. Garnish with green onions and sesame seeds.
