A flavorful and easy-to-make bowl combining spicy honey-glazed chicken with fresh toppings for a satisfying meal.

Ingredients

Protein

  • 1 lb chicken thighs, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste Salt and pepper (to taste)
  • 1/2 cup hot honey (or honey mixed with chili flakes)
  • 1 cup cooked rice or quinoa
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 avocado avocado, sliced
  • Fresh cilantro Fresh cilantro for garnish
  • Lime wedges for serving Lime wedges for serving

Instructions 

  • Slice chicken into bite-sized pieces and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Heat olive oil in a skillet over medium heat. Cook chicken for 6-8 minutes until browned and cooked through.
  • Pour hot honey over cooked chicken and stir to coat. Cook for 2-3 minutes until sauce thickens.
  • Assemble bowls with cooked rice or quinoa at the base, then top with corn, black beans, avocado slices, and honey chicken.
  • Garnish with cilantro and serve with lime wedges. Enjoy!

Notes

For extra flavor, add a squeeze of lime or a sprinkle of additional cilantro.
