Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts (about 6 ounces each)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup honey
  • 1/2 cup low sodium chicken broth
  • 1 teaspoon lemon zest
  • 1 tablespoon unsalted butter
  • 2 tablespoons chopped fresh parsley

Instructions 

  • Season chicken with salt and black pepper. Cook in olive oil until golden and cooked through, then set aside.
  • Sauté garlic in the same skillet for 30 seconds.
  • Pour in lemon juice, honey, and chicken broth; simmer until slightly thickened.
  • Add lemon zest and butter; stir until glossy.
  • Return chicken to skillet, coat with sauce, and cook 2 more minutes. Garnish with parsley before serving.

Notes

For extra flavor, marinate the chicken in lemon juice and herbs beforehand.
