Ingredients

Batter

  • 1 cup potato starch
  • 3 cups water
  • 1 lb shrimp, peeled & deveined
  • 1 egg white egg white
  • 1 tsp neutral oil
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp white pepper
  • 1/4 tsp dashi powder (optional) (adds umami)
  • Neutral oil for frying neutral oil for frying
  • 6 cloves garlic, minced
  • 1/4 cup water
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1/4 tsp MSG (optional) (highly recommended)
  • 1 tbsp potato starch + water slurry

Instructions 

  • Mix potato starch and water to make the batter.
  • Combine shrimp, garlic, salt, pepper, dashi powder, and egg white; coat with batter.
  • Heat oil and fry the shrimp pancake until crispy and golden.
  • In a small pan, cook garlic in oil, then add water, honey, soy sauce, and MSG; simmer.
  • Add slurry to sauce, cook until thickened, then drizzle over the pancake before serving.

Notes

Ensure oil is hot enough before frying to achieve crispiness.
