Ingredients

Protein

  • 4 pieces Boneless, skinless chicken thighs or breasts
  • 3 tablespoons Honey
  • 2 chipotle peppers in adobo sauce Chipotle peppers in adobo sauce
  • 3 cloves Garlic (minced)
  • 2 tablespoons Lime juice
  • 2 tablespoons Soy sauce or tamari
  • 1 tablespoon Apple cider vinegar
  • 2 tablespoons Olive oil

Grains

  • 1 cup Basmati or jasmine rice

Toppings

  • 1 avocado Avocado (diced)
  • 0.5 cup Fresh cilantro (chopped)
  • 4 lime wedges Lime wedges
  • 1 cup Black beans (cooked and warmed)
  • 1 cup Roasted corn (optional)
  • 0.5 cup Pickled red onions
  • 0.5 cup Crema or Greek yogurt

Instructions 

  • Blend honey, chipotle peppers, garlic, lime juice, soy sauce, and vinegar to make the sauce.
  • Cut chicken into pieces, coat with half of the sauce, and marinate for 30 minutes.
  • Cook rice according to package instructions.
  • Cook chicken in olive oil until caramelized, 5-7 minutes.
  • Prepare toppings: dice avocado, chop cilantro, warm beans and corn.
  • Assemble bowls with rice, chicken, toppings, and drizzle with remaining sauce. Serve with lime wedges.

Notes

Marinate the chicken for extra flavor and serve immediately for best taste.
