A comforting and hearty soup perfect for using leftover turkey, packed with vegetables and flavorful herbs.
Ingredients
Broth and Water

carrots (sliced)

shredded turkey (fresh or frozen)

Instructions
Heat olive oil in a stockpot and cook onion, celery, and carrots until softened (~4-5 min).
Add garlic, broth, and water; bring to a boil.
Stir in herbs, salt, and pepper.
Add turkey and pasta; simmer for 10 minutes.
Ladle into bowls and garnish with remaining parsley.
Notes
Use leftover turkey for best flavor. Adjust seasoning to taste.
