A comforting and hearty soup perfect for using leftover turkey, packed with vegetables and flavorful herbs.

Ingredients

Broth and Water

  • 1 tbsp olive oil
  • 1 cup onion (diced)
  • 1 cup celery (diced)
  • 1 cup carrots (sliced)
  • 1 tbsp garlic (minced)
  • 4 cans chicken broth (56 oz.)
  • 1 can water (14 oz.)
  • 1 tbsp parsley (dried or fresh)
  • 1/2 tsp parsley (additional)
  • 1 tsp thyme (dried)
  • 1 tsp oregano (dried)
  • 2 tsp salt
  • 2 tsp pepper

Turkey

  • 1 lb shredded turkey (fresh or frozen)

Pasta

  • 2 cups pasta (egg noodles or rotini)

Instructions 

  • Heat olive oil in a stockpot and cook onion, celery, and carrots until softened (~4-5 min).
  • Add garlic, broth, and water; bring to a boil.
  • Stir in herbs, salt, and pepper.
  • Add turkey and pasta; simmer for 10 minutes.
  • Ladle into bowls and garnish with remaining parsley.

Notes

Use leftover turkey for best flavor. Adjust seasoning to taste.
