A comforting homemade chicken soup with fresh herbs, perfect for a cozy meal. Customize with noodles or rice for added heartiness.

Ingredients

  • 1/2 piece bone-in, skin-on chicken breast half
  • 2 tablespoons olive oil
  • 1 large vidalia onion ((diced))
  • 2 large carrots ((diced))
  • 1 large celery stalk ((diced))
  • 3 cloves garlic ((minced))
  • 5 cups chicken stock ((homemade or store bought))
  • 1 tablespoon fresh chopped thyme
  • 1 tablespoon fresh chopped dill
  • 1 tablespoon fresh chopped parsley
  • to taste kosher salt and fresh ground pepper

Instructions 

  • Preheat oven to 425˚F (220˚C).
  • Rub the chicken with olive oil, salt, and pepper. Roast until cooked through (25-30 min). Cool, then shred.
  • In a large pot, heat olive oil. Cook onions until softened, then add carrots, celery, and garlic; cook 1 min.
  • Add shredded chicken, chicken stock, herbs, salt, and pepper. Bring to boil, then simmer 10 min.
  • Serve hot or store in containers for freezing up to 3 months.

Notes

You can add noodles or rice during the last few minutes of simmering for a heartier soup.
