Instructions
Preheat oven to 425˚F (220˚C).
Rub the chicken with olive oil, salt, and pepper. Roast until cooked through (25-30 min). Cool, then shred.
In a large pot, heat olive oil. Cook onions until softened, then add carrots, celery, and garlic; cook 1 min.
Add shredded chicken, chicken stock, herbs, salt, and pepper. Bring to boil, then simmer 10 min.
Serve hot or store in containers for freezing up to 3 months.
Notes
You can add noodles or rice during the last few minutes of simmering for a heartier soup.
