A delicious low-carb, high-protein pumpkin spice loaf perfect for fall. Easy to make and naturally sweetened, it's a healthy treat for any occasion.

Ingredients

Dry ingredients

  • 2 cups almond flour
  • 1 tsp baking powder
  • 3 tsp pumpkin pie spice
  • 1 tsp ground cloves
  • 1 tsp cinnamon

Wet ingredients

  • 1/2 cup brown sweetener
  • 3 large eggs
  • 1/3 cup unsalted butter
  • 1/2 cup cottage cheese
  • 1/2 cup pumpkin puree
  • 3/4 cup powdered sweetener sugar substitute
  • 1 tsp greek yogurt
  • 2 tbsp pumpkin puree

Instructions 

  • Preheat oven to 325°F (160°C). Grease a loaf pan and line with parchment.
  • Mix dry ingredients in a bowl. Blend wet ingredients (except pumpkin) until smooth, then combine with dry. Add pumpkin puree and mix.
  • Pour batter into pan, smooth top, and bake for 45–50 minutes. Cool before glazing.
  • Make glaze by whisking powdered sweetener, Greek yogurt, and pumpkin until smooth. Spread over cooled loaf and refrigerate to set.

Notes

Store in refrigerator and enjoy within 3 days for best freshness.
