These protein-packed potato pancakes are crispy, flavorful, and perfect for a hearty breakfast or brunch.

Ingredients

Potatoes

  • 4 medium russet potatoes, peeled and grated
  • 1 cup cottage cheese (full-fat)
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup shredded cheddar cheese
  • 3 green onions green onions, chopped
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • for frying Oil (vegetable or canola)

Instructions 

  • Peel and grate potatoes, then squeeze out excess liquid.
  • Mix grated potatoes with cottage cheese, eggs, flour, green onions, garlic powder, salt, and pepper.
  • Heat oil in a skillet over medium-high heat.
  • Cook 1/4 cup batter for 4-5 minutes per side until golden and crispy.
  • Drain on paper towels and serve hot with toppings.

Notes

For extra flavor, add chopped herbs or serve with sour cream.
