Ingredients

Dairy

  • 2 cups cottage cheese
  • 1 cup shredded cheddar cheese

Vegetables

  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 1/2 cup diced onion

Eggs

  • 4 large eggs

Spices & Oils

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil

Garnish

  • 1/4 cup chopped fresh parsley ((for garnish))

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch dish with olive oil.
  • Mix cottage cheese, cheeses, vegetables, spices in a bowl.
  • Whisk eggs and combine with the mixture.
  • Pour into dish and bake for 30-35 minutes until golden.
  • Cool for 5-10 minutes, garnish with parsley, then serve.
