High Protein Apple Pecan Bread

A nutritious and flavorful bread packed with protein, apples, and pecans, perfect for a wholesome snack or breakfast.

Ingredients

Dry Ingredients

  • 1 cup vanilla flavored whey protein powder
  • 1/2 cup almond flour
  • 1/2 cup tapioca starch
  • 1/4 cup coconut flour
  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/2 tsp Himalayan salt
  • 1 large purple skin white flesh sweet potato (baked and cooled, skin removed) ((about 300g | 10oz))
  • 1/3 cup ghee
  • 1/4 cup pure maple syrup
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 tsp pure vanilla extract

Fruits and Nuts

  • 3 medium red apples (peeled and grated) ((2 cups))
  • 1/2 cup chopped raw pecans
  • 2 tbsp pure maple sugar
  • 1 tbsp ghee

Instructions 

  • Preheat oven to 350°F (175°C). Prepare the crumble by mixing pecans, maple sugar, and ghee; set aside.
  • Grease a loaf pan with ghee or coconut oil and line with parchment paper.
  • Combine dry ingredients in a food processor, then transfer to a bowl.
  • Process sweet potato, ghee, and maple syrup until creamy; add eggs and process again.
  • Add dry ingredients to wet mixture, then mix in buttermilk, lime juice, vanilla, and grated apples. Pour into pan, sprinkle crumble, and bake for 50 minutes.
  • Cool in pan for 10 minutes, then transfer to a wire rack to cool completely. Chill before slicing.

Store in an airtight container for up to a week.
