1/2cuptapioca starch
1/4cupcoconut flour

1largepurple skin white flesh sweet potato (baked and cooled, skin removed)((about 300g | 10oz))
1/3cupghee
1/4cuppure maple syrup
2largeeggs
1/2cupbuttermilk
1tsppure vanilla extract

3mediumred apples (peeled and grated)((2 cups))
1/2cupchopped raw pecans
2tbsppure maple sugar

Instructions
Preheat oven to 350°F (175°C). Prepare the crumble by mixing pecans, maple sugar, and ghee; set aside.
Grease a loaf pan with ghee or coconut oil and line with parchment paper.
Combine dry ingredients in a food processor, then transfer to a bowl.
Process sweet potato, ghee, and maple syrup until creamy; add eggs and process again.
Add dry ingredients to wet mixture, then mix in buttermilk, lime juice, vanilla, and grated apples. Pour into pan, sprinkle crumble, and bake for 50 minutes.
Cool in pan for 10 minutes, then transfer to a wire rack to cool completely. Chill before slicing.
