A flavorful side dish featuring tender Yukon gold potatoes infused with fresh herbs and cooked to perfection in a skillet.

baby Yukon gold potatoes
(cut in half lengthwise)

Instructions
In a bowl, toss potatoes with 2 tbsp olive oil, salt, and pepper.
Heat a skillet over medium-low heat, add 2 tbsp olive oil, then sauté shallots for 1 min. Add garlic and cook 30 sec.
Add potatoes, stir, cover, and cook 10-12 min, stirring halfway. Add water if needed to steam finish.
Remove cover, increase heat to medium-high, cook 5-7 min until lightly browned, stirring occasionally.
Melt butter, turn off heat, add herbs, toss, and season to taste.
Notes
Adjust seasoning as desired and serve hot.
