A flavorful side dish featuring tender Yukon gold potatoes infused with fresh herbs and cooked to perfection in a skillet.

Ingredients

  • 1.5 pounds baby Yukon gold potatoes (cut in half lengthwise)
  • 0.25 cup extra virgin olive oil (divided)
  • 0.75 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 cup diced shallots ((½" dice))
  • 3 cloves garlic ((⅛" slices))
  • 1 tablespoon unsalted butter
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped parsley

Instructions 

  • In a bowl, toss potatoes with 2 tbsp olive oil, salt, and pepper.
  • Heat a skillet over medium-low heat, add 2 tbsp olive oil, then sauté shallots for 1 min. Add garlic and cook 30 sec.
  • Add potatoes, stir, cover, and cook 10-12 min, stirring halfway. Add water if needed to steam finish.
  • Remove cover, increase heat to medium-high, cook 5-7 min until lightly browned, stirring occasionally.
  • Melt butter, turn off heat, add herbs, toss, and season to taste.

Notes

Adjust seasoning as desired and serve hot.
