A comforting and nutritious stew perfect for autumn evenings, packed with seasonal vegetables and flavorful herbs.

Ingredients

olive oil

  • 2 tbsp olive oil

vegetables

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots carrots, diced
  • 2 stalks celery stalks, diced
  • 2 cups butternut squash, cubed
  • 1 large sweet potato, cubed
  • 1 apple apple, peeled and diced

canned goods

  • 14 oz diced tomatoes
  • 15 oz cannellini beans, rinsed and drained

liquids

  • 4 cups vegetable broth
  • 2 tsp fresh thyme
  • 1 tsp rosemary
  • 1 tsp smoked paprika
  • 1 bay leaf bay leaf

seasoning

  • to taste Salt and pepper
  • 2 cups chopped kale or Swiss chard

optional

  • 1 squeeze lemon juice or splash of apple cider vinegar (for brightness)

Instructions 

  • Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté until softened (~5 min).
  • Add butternut squash, sweet potato, and apple; cook 5 min with herbs and spices.
  • Pour in tomatoes, beans, and broth; add bay leaf. Bring to boil, then simmer 25–30 min until vegetables are tender.
  • Stir in kale; cook 5 min until wilted. Remove bay leaf, adjust seasoning, and add lemon or vinegar before serving.

Notes

This stew is versatile and can be customized with your favorite greens or additional spices for extra flavor.
