Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 8 ounces ground turkey
  • 1 clove garlic (minced)
  • 2-3 cups fresh spinach
  • 1/4 teaspoon salt
  • To Taste pepper
  • 1/4 teaspoon dried oregano
  • 2 large tortillas
  • 2 cups mozzarella cheese (shredded)

Instructions 

  • Cook turkey in heated skillet with olive oil until browned.
  • Add garlic and spinach; cook until wilted. Season with salt, pepper, oregano.
  • Layer cheese and turkey mixture on tortillas, fold in half.
  • Cook each quesadilla in skillet until golden, flipping halfway.
  • Cut into 4 pieces and serve.
