A nutritious and flavorful dish featuring bell peppers filled with seasoned turkey, beans, and rice, topped with cheese and fresh cilantro.
Ingredients

lean ground turkey

diced tomatoes, drained
1 can (15 oz)
black beans, rinsed and drained

corn kernels

taco seasoning (1 packet)

cooked brown rice (or cauliflower rice)

shredded Mexican blend cheese

chopped fresh cilantro

Optional
toppings: avocado, Greek yogurt/sour cream, salsa
Instructions
Preheat oven to 375°F. Prepare peppers and place in baking dish.
Cook turkey and onion until browned. Add garlic, seasoning, tomatoes, beans, and corn; simmer 5 minutes.
Mix in cooked rice, half the cheese, and cilantro. Stuff peppers with mixture.
Top with remaining cheese, add water, cover, and bake 25 minutes. Uncover and bake 10 more minutes.
Garnish with cilantro, lime wedges, and optional toppings before serving.
