This Healthy Pumpkin Bread is a delicious and nutritious treat, perfect for fall or any time of year!

Ingredients

Dry Ingredients

  • 1.5 cup whole wheat pastry flour
  • 0.25 tsp salt
  • 0.25 tsp baking powder
  • 0.75 tsp baking soda
  • 0.5 tsp cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp nutmeg
  • 0.5 cup golden coconut sugar ((or unbleached organic sugar))
  • 1/3 cup softened butter
  • 1 large egg
  • 16 ounces pumpkin puree

Instructions 

  • Preheat oven to 325F and grease a loaf pan.
  • Mix dry ingredients in a bowl.
  • Cream butter and sugar, add egg, and beat until fluffy.
  • Add pumpkin and mix, then gradually combine with dry ingredients.
  • Bake for 55-75 minutes until a toothpick comes out clean.
  • Cool, then wrap to prevent drying out.

Notes

Wrap bread to keep it fresh; it can be enjoyed warm or cold!
