Ingredients

Spices

  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda

Dry ingredients

  • 1 cup all-purpose flour
  • 0.5 cup quick oats

Wet ingredients

  • 0.5 cup softened unsalted butter
  • 0.75 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla essence
  • 0.75 cup finely diced apples

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix dry ingredients: flour, oats, cinnamon, nutmeg, salt, and baking soda.
  • Cream butter and brown sugar until smooth. Add egg and vanilla, mix well.
  • Stir in diced apples. Combine wet and dry ingredients.
  • Drop spoonfuls onto prepared baking sheet and bake for 12 minutes.

Notes

For softer cookies, slightly underbake and let cool on the baking sheet.
