Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix dry ingredients: flour, oats, cinnamon, nutmeg, salt, and baking soda.
Cream butter and brown sugar until smooth. Add egg and vanilla, mix well.
Stir in diced apples. Combine wet and dry ingredients.
Drop spoonfuls onto prepared baking sheet and bake for 12 minutes.
