A moist and tangy loaf cake combining Greek yogurt and fresh lemon for a healthy treat.

Ingredients

Dry ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt

Wet ingredients

  • 1 cup plain unsweetened Greek yogurt
  • ½ cup honey or maple syrup
  • ¼ cup freshly squeezed lemon juice
  • Zest of 2 lemons lemon zest

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a loaf pan.
  • Mix dry ingredients in a bowl.
  • Combine wet ingredients until smooth.
  • Fold wet into dry until just combined.
  • Pour batter into pan and bake for 45-50 minutes.
  • Cool before slicing and serving.
