These delicious gluten-free corn fritters are quick to make and perfect for a healthy snack or meal. Crispy on the outside and tender inside, they showcase fresh ingredients and simple flavors.

Ingredients

Canned Corn Kernels

  • 420 grams canned corn kernels (one standard tin of corn)
  • 0.25 red onion red onion (or 1/2 a smaller-sized onion)
  • 1 large handful fresh parsley, mint or coriander (whatever you prefer)
  • 2 eggs eggs
  • 65-70 grams gluten free plain flour (approximately 1/2 cup)
  • 1 tsp baking powder (gluten free)
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1-2 tsp curry powder (adjust quantity to taste)
  • for frying olive oil, ghee, coconut oil etc. (for frying)

Instructions 

  • Drain the corn thoroughly. Measure out 1 cup of corn and set aside.
  • Place 1 cup of corn and eggs in a blender; pulse to form a chunky batter.
  • Add flour, baking powder, curry powder, salt, and pepper; pulse again. Mix in chopped onion, herbs, and remaining corn.
  • Heat a non-stick pan with a little oil over moderate heat. Scoop batter and flatten into 1cm thick fritters. Cook 2-3 minutes per side.
  • Repeat with remaining batter, adding oil as needed. Serve warm with sides of choice.

Notes

Ensure not to overcrowd the pan for even cooking and crispiness.
