Ingredients

Dry Ingredients

  • 2 ¼ cups white whole wheat flour or gluten-free flour
  • 1 ½ tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 3 tbsp orange zest (about 2 medium)

Wet Ingredients

  • ½ tbsp coconut oil or unsalted butter, melted
  • 2 large egg whites egg whites, room temperature
  • 2 tsp vanilla extract
  • 1 tbsp vanilla stevia
  • ½ cup plain nonfat Greek yogurt
  • ½ cup freshly squeezed orange juice (about 2 medium)
  • 10 tbsp nonfat milk

Add-ins

  • 1 ½ cups fresh whole cranberries, diced
  • 1 cup plain nonfat Greek yogurt (for frosting)
  • 8 oz light or fat-free cream cheese, well softened (for frosting)
  • 2 servings sugar-free, fat-free instant cheesecake pudding mix (for frosting)
  • tsp vanilla stevia (for frosting)

Instructions 

  • Preheat oven to 350°F (175°C). Line muffin tin with paper liners and spray with cooking spray.
  • Mix dry ingredients and orange zest in a bowl. Whisk wet ingredients, then combine with yogurt and orange juice.
  • Alternate adding dry mixture and milk to the wet, then fold in cranberries. Divide batter into liners and bake for 22-25 minutes.
  • Cool cupcakes completely. Prepare frosting by mixing yogurt, cream cheese, pudding mix, and vanilla stevia; refrigerate for 2 hours.
  • Pipe frosting onto cooled cupcakes just before serving.

Notes

Use fresh cranberries for best flavor and texture.
