A wholesome gingerbread loaf with a sweet maple glaze, perfect for cozy holidays or anytime you crave warm spices.

Ingredients

Dry Ingredients

  • 2 cups whole wheat flour or gluten-free flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tbsp ground ginger (see Notes before beginning!)
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp salt

Wet Ingredients

  • 1 tbsp unsalted butter or coconut oil, melted and cooled slightly
  • 2 large egg whites egg whites (room temperature)
  • 1 ½ tsp vanilla extract
  • ¾ cup plain nonfat Greek yogurt
  • ¼ cup molasses (not blackstrap)
  • ¼ cup pure maple syrup
  • 6 tbsp nonfat milk
  • 2 tbsp plain nonfat Greek yogurt
  • 1 ½ tsp pure maple syrup
  • ¼ tsp liquid stevia (or adjusted to taste)

Instructions 

  • Preheat oven to 325°F and spray a 9x5” loaf pan with nonstick spray.
  • Whisk dry ingredients in a bowl. In a separate bowl, mix wet ingredients, then combine with dry, alternating with milk.
  • Pour batter into pan and bake for 35-40 minutes until firm and a toothpick comes out clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Mix yogurt, maple syrup, and stevia to make glaze. Drizzle over loaf before serving.

Notes

For best flavor, use fresh spices and high-quality molasses.
