boneless beef chuck

(or 3 cups broth + 3 cups water)

small Yukon gold potatoes
(cut into 1-inch pieces)

(sliced into ¼-inch coins)

celery stalks
(sliced ¼-inch thick)

Instructions
Pat the beef dry, season with salt and pepper, then brown in batches in hot oil. Set aside.
Sauté onions in the same pot until softened, then add carrots and celery, cooking for a few minutes. Add garlic and cook briefly.
Return beef to the pot, sprinkle with flour, and stir to coat. Pour in broth, tomato paste, and vinegar, stirring until combined.
Add potatoes, bring to a boil, then reduce heat, cover, and simmer for 2 hours until beef is tender. Stir in peas in the last 5 minutes.
If desired, whisk cornstarch with water and stir into the stew to thicken, cooking for a few more minutes.
Notes
For a thicker stew, add a cornstarch slurry during the final step.
