Spooky and adorable cupcakes perfect for Halloween parties, decorated to look like mummies with icing and candy eyes.

Ingredients

Dry ingredients

  • 175 g plain/all purpose flour
  • 180 g caster sugar
  • 30 g cocoa powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 100 g chocolate chips or chopped chocolate
  • 100 ml cold coffee
  • 100 ml buttermilk (see notes for alternative)
  • 110 ml vegetable oil
  • 2 large eggs

Frosting

  • royal icing/ buttercream/ frosting of choice
  • edible eyes/ candy eyes

Instructions 

  • Preheat oven to 175°C (160°C fan). Line cupcake tin with liners.
  • Mix dry ingredients, then add chocolate chips and combine.
  • Whisk wet ingredients, then combine with dry to form smooth batter.
  • Fill cupcake cases 2/3 full and bake for 22-24 minutes. Cool completely.
  • Decorate with icing and candy eyes; pipe mummy lines with icing.

Notes

Ensure cupcakes are fully cooled before decorating to prevent melting.
