Enjoy these healthy and flavorful zucchini boats filled with seasoned ground turkey and melted cheese, perfect for a quick dinner.

Ingredients

Vegetables

  • 4 medium zucchinis (halved and seeds scooped out)
  • 1 lb ground turkey
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • 1 cup shredded mozzarella cheese
  • for garnish Fresh parsley (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Slice zucchinis in half and scoop out seeds.
  • Cook onions and garlic until soft; add turkey and cook until browned. Stir in tomatoes and seasonings, simmer 5 minutes.
  • Fill zucchini halves with turkey mixture and top with cheese.
  • Bake for 20 minutes until cheese melts. Garnish with parsley before serving.

Notes

You can add a sprinkle of red pepper flakes for extra heat.
