Enjoy these healthy and flavorful zucchini boats filled with seasoned ground turkey and melted cheese, perfect for a quick dinner.
Ingredients

(halved and seeds scooped out)

Instructions
Preheat oven to 375°F (190°C). Slice zucchinis in half and scoop out seeds.
Cook onions and garlic until soft; add turkey and cook until browned. Stir in tomatoes and seasonings, simmer 5 minutes.
Fill zucchini halves with turkey mixture and top with cheese.
Bake for 20 minutes until cheese melts. Garnish with parsley before serving.
Notes
You can add a sprinkle of red pepper flakes for extra heat.
