russet potatoes (peeled and diced into 1-inch cubes)

Instructions
Peel and dice potatoes into 1-inch cubes, rinse, and dry.
Heat olive oil in a skillet, cook potatoes until golden, then set aside.
Cook ground beef until browned, then push to side of pan.
Add chopped onion and garlic, cook until translucent, then stir in spices and tomato paste.
Pour in broth, add potatoes, cover, and simmer for 10-15 minutes. Garnish with parsley before serving.
