A quick and healthy ground beef skillet packed with colorful vegetables and savory flavors, perfect for a nutritious weeknight dinner.

Ingredients

Meat

  • 1 lb grass-fed ground beef
  • 1 tbsp olive oil
  • 2 cups zucchini cubed
  • 1 cup broccoli florets
  • 3/4 cup red bell pepper chopped
  • 1/2 cup red onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce or coconut aminos
  • to taste salt and pepper

Fresh herbs

  • to taste fresh parsley

Instructions 

  • Heat oil in a large skillet. Add ground beef and cook for 8-10 minutes, then add chopped onion and garlic. Cook until beef is no longer pink.
  • While cooking, chop the vegetables. Add zucchini, broccoli, and bell pepper to the skillet and stir well.
  • Season with salt, pepper, add soy sauce and tomato paste, and stir to combine. Cover and simmer for 6-8 minutes until vegetables are tender and sauce thickens.
  • Garnish with chopped fresh parsley and serve hot.
