A quick and flavorful skillet dish combining seasoned ground beef, colorful peppers, beans, and cheese, topped with sour cream and cilantro.

Ingredients

Meat

  • 1 lb lean ground beef

Vegetables

  • 1 cup bell peppers mixed colors
  • 1 medium yellow onion

Seasonings

  • 2 tbsp taco seasoning

Canned Goods

  • 1 can 15 oz black beans, drained

Cheese

  • 1 cup shredded cheddar cheese

Toppings

  • ½ cup sour cream for topping
  • ¼ cup fresh cilantro for garnish

Instructions 

  • Chop bell peppers and onion into bite-sized pieces.
  • Cook ground beef in a skillet over medium heat until browned, 5-7 minutes. Drain excess fat.
  • Add chopped vegetables to the skillet and sauté 4-5 minutes until softened.
  • Stir in taco seasoning and black beans; cook until heated through.
  • Sprinkle shredded cheese over the mixture, cover, and cook 2 minutes until melted. Serve topped with sour cream and cilantro.

Notes

For a spicier kick, add hot sauce or jalapeños.
