Ingredients

Meat and Rice

  • 1 pound lean ground beef 80/20 or leaner
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 0.5 cup tomato sauce or salsa
  • 0.5 cup water
  • 1 cup long-grain white or brown rice
  • 2 cups water or chicken broth
  • 1 each lime, juiced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon butter or olive oil
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, grilled or canned, drained
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 avocado diced or sliced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, thinly sliced
  • 1 cup shredded cheese (cheddar, Monterey Jack, or blend)
  • 0.5 cup sour cream
  • to taste hot sauce, for drizzling
  • 1 jalapeño sliced (optional)
  • for garnish fresh cilantro leaves
  • for serving lime wedges

Instructions 

  • Rinse the rice and cook in boiling water or broth until tender, about 15-20 minutes. Fluff and stir in lime juice, cilantro, and butter. Keep warm.
  • In a skillet, sauté onion and garlic in olive oil until softened. Add ground beef and cook until browned. Stir in taco seasoning, tomato sauce, and water; simmer until thickened, about 5-7 minutes.
  • Assemble bowls starting with rice, then add seasoned beef. Top with beans, corn, lettuce, avocado, tomatoes, onion, and cheese. Finish with sour cream, hot sauce, cilantro, jalapeños, and lime wedges.
