A quick and flavorful skillet dish combining lean ground beef, fresh vegetables, and cheese for a satisfying dinner.

lean ground beef

black beans
(drained and rinsed)

fire-roasted tomatoes

frozen corn

taco seasoning
(or 1 packet)

shredded Mexican-style or Monterey Jack cheese

Instructions
Heat avocado oil in a large skillet over medium-high heat.
Add sweet potato and cook for 4–5 minutes, stirring occasionally.
Add zucchini, bell pepper, onion, and garlic; cook 3–4 minutes until slightly tender.
Push veggies to one side, add ground beef; cook 7–9 minutes, breaking it up and draining grease.
Reduce heat, add beans, tomatoes, corn, and seasoning; stir to combine. Top with cheese, cover, and let melt for 2 minutes.
Top with cilantro and green onions if using. Serve warm.
Notes
For extra flavor, add a squeeze of lime before serving.
