Ingredients

Meat

  • 1 pound lean ground beef

Vegetables

  • 2 medium sweet potatoes, peeled and cubed (about 3 cups)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons extra virgin olive oil

Instructions 

  • Preheat oven to 400°F (200°C).
  • Cook ground beef in olive oil until browned, then add onions and garlic; cook until translucent.
  • Add bell peppers, cumin, and paprika; cook until peppers soften.
  • Combine beef mixture with sweet potatoes in an oven-safe dish; season with salt and pepper.
  • Bake for 25-30 minutes until sweet potatoes are tender and edges are crispy.
