A quick and hearty dish combining ground beef, fresh cabbage, and vegetables, perfect for a fast weeknight dinner.

Ingredients

Meat

  • 1 pound lean ground beef
  • ½ medium medium cabbage (chopped)
  • 1 medium medium carrot (grated or julienned)
  • 3 tablespoons tomato sauce or paste
  • ½ cup beef broth (or vegetable broth)
  • 1 ½ teaspoons paprika (regular or smoked)
  • 1 medium to large onion
  • 2-3 tablespoons vegetable oil for cooking

Instructions 

  • Heat oil in a large skillet over medium heat. Add ground beef, salt, and pepper; cook until browned. Drain excess fat and set aside.
  • Add chopped onion to the skillet; cook until translucent. Stir in grated carrot and cook until soft.
  • Add tomato sauce and broth; simmer for 2-3 minutes. Then add cabbage, salt, pepper, and paprika; stir well.
  • Cover and simmer until cabbage is tender, stirring occasionally. Return cooked beef to the skillet and mix.
  • Garnish with fresh herbs if desired and serve hot.

Notes

For a crunchier cabbage, cook it briefly; for softer cabbage, cook longer.
