Ingredients

Vegetables

  • 1 medium zucchini, sliced
  • 1 large bell pepper, sliced
  • 1 large red onion, sliced
  • 1 cup mushrooms, sliced
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • 4 large tortillas
  • Your favorite sauce sauce (hummus, ranch, or tzatziki)
  • Fresh greens greens (spinach or arugula)

Instructions 

  • Preheat grill and toss vegetables with olive oil, salt, and pepper.
  • Grill vegetables until tender and slightly charred, about 5-7 minutes.
  • Warm tortillas on the grill for 1-2 minutes.
  • Spread your favorite sauce on each tortilla, then layer with grilled vegetables and greens.
  • Roll up the tortillas tightly to form wraps.
