A vibrant, herbaceous dip combining creamy feta with fresh herbs and citrus for a bright, flavorful appetizer or spread.

Ingredients

Dairy

  • 8 ounces Feta Cheese (Use good quality feta packed in brine, drained and crumbled)
  • 0.25 cup Olive Oil (Extra virgin recommended)

Herbs and Aromatics

  • 1 cup Fresh Parsley (Packed)
  • 0.5 cup Fresh Basil (Packed)
  • 0.25 cup Fresh Mint (Packed)
  • 2-3 pieces Green Onions (White and light green parts)
  • 2 cloves Garlic Cloves (Adjust to taste)
  • 2 tablespoons Lemon Juice (Freshly squeezed)
  • 1 teaspoon Lemon Zest (Use a microplane or fine grater)

Seasoning

  • to taste Salt (Start small, adjust after blending)
  • to taste Black Pepper (Freshly ground)

Instructions 

  • Drain and crumble the feta cheese.
  • In a food processor, blend feta and olive oil until smooth and creamy.
  • Add herbs, green onions, and garlic; pulse briefly to combine.
  • Mix in lemon juice and zest, then season with salt and pepper to taste. Blend until well combined.
  • Transfer to a bowl, chill for at least 30 minutes, then serve with dippers.

Notes

For a thinner dip, add a drizzle of olive oil or water before serving.
