These moist and healthy muffins combine Greek yogurt and whole wheat flour with chocolate chips for a delicious treat.

Ingredients

dry ingredients

  • 1 cup plain whole fat Greek yogurt
  • 1/4 cup coconut oil (melted)
  • 2 eggs eggs
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup real maple syrup
  • 1 1/2 cups whole wheat pastry flour (or all purpose flour)
  • 1 cup mini semi-sweet chocolate chips

Instructions 

  • Whisk dry ingredients: flour, salt, baking soda, baking powder.
  • Mix wet ingredients: Greek yogurt, maple syrup, eggs, vanilla, melted coconut oil.
  • Combine wet and dry, fold in chocolate chips, reserving some for topping.
  • Divide batter into 12 muffin cups, top with reserved chocolate chips.
  • Bake at 350°F (175°C) for 18-22 minutes until a toothpick comes out clean.

Notes

For extra flavor, add a handful of chopped nuts or berries.
