A rich and creamy beef stroganoff with tender rib-eye steak and savory mushroom sauce, served over buttered noodles.

Ingredients

Meat

  • 600 g rib-eye steak (trimmed and pounded ¾ cm thick)

Vegetables

  • 300 g cremini mushrooms (sliced ⅛-inch thick)
  • 1 medium onion (thin-sliced)

Condiments & Sauces

  • 1 Tbsp Dijon mustard
  • 150 ml full-fat sour cream
  • 500 ml low-salt beef broth

Dairy & Fats

  • 2 Tbsp butter
  • 1 Tbsp plain flour

Oils & Seasonings

  • 2 Tbsp neutral oil (for searing)
  • Kosher salt to taste Kosher salt
  • Freshly cracked black pepper to taste black pepper

Garnish

  • Chopped chives for garnish chives

Servings

  • Egg noodles or tagliatelle for serving noodles

Instructions 

  • Pound the steak, slice into strips, and season with salt and pepper.
  • Heat oil, sear beef in batches for 30 seconds per side, then set aside.
  • Lower heat, add butter and onions, cook 1 minute, then add mushrooms and cook 4 minutes.
  • Sprinkle flour, stir 1 minute, add broth and mustard, simmer 5 minutes.
  • Remove from heat, stir in sour cream, then reheat beef for 1 minute. Serve over noodles garnished with chives.

Notes

Use high-quality beef for best flavor. Adjust seasoning to taste.
