Instructions
Pound the steak, slice into strips, and season with salt and pepper.
Heat oil, sear beef in batches for 30 seconds per side, then set aside.
Lower heat, add butter and onions, cook 1 minute, then add mushrooms and cook 4 minutes.
Sprinkle flour, stir 1 minute, add broth and mustard, simmer 5 minutes.
Remove from heat, stir in sour cream, then reheat beef for 1 minute. Serve over noodles garnished with chives.
Notes
Use high-quality beef for best flavor. Adjust seasoning to taste.
