Delight in these small-batch, gluten-free chocolate chip cookies with rich brown butter flavor and optional flaky sea salt topping.

Ingredients

Butter

  • 40 grams unsalted butter (which we will brown)
  • 45 grams light brown sugar (dark brown sugar works as well)
  • 12 grams granulated white sugar
  • 1 egg yolk egg yolk (room temp)
  • 0.5 teaspoon vanilla extract
  • 56 grams gluten-free multipurpose flour
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon kosher salt (1 gram)
  • 50-75 grams chopped dark chocolate
  • Additional chocolate
  • Flaky sea salt (optional)

Instructions 

  • Preheat oven to 350°F and line a baking sheet with parchment.
  • Brown the butter until nutty and amber, then cool for 5-10 minutes.
  • Mix cooled butter with sugars and vanilla, then add egg yolk and combine.
  • Fold in dry ingredients and chocolate, then form 2-3 cookies and top with extra chocolate.
  • Bake for 9-14 minutes until golden and puffy, then optionally sprinkle with sea salt and cool.

Notes

Use high-quality dark chocolate for best flavor.
