Enjoy crispy, gluten-free chicken tenders made with simple ingredients and cooked to perfection in the air fryer.

Ingredients

Protein

  • 1.5 pounds chicken breasts (cut into 1-inch strips)
  • 1 cup fine ground cornmeal
  • 0.5 cup cassava flour
  • 1 teaspoon coarse Kosher salt
  • 0.5 teaspoon fresh ground black pepper
  • 0.25 teaspoon paprika
  • 0.25 teaspoon ground mustard seed
  • 0.25 teaspoon garlic powder
  • 2 each eggs (beaten)

Instructions 

  • Mix cornmeal, cassava flour, salt, pepper, paprika, mustard seed, and garlic powder. Whisk eggs separately.
  • Preheat air fryer to 390°F (200°C) for 12 minutes.
  • Dredge chicken strips in eggs, then coat with the cornmeal mixture. Place in the air fryer basket with space between pieces.
  • Cook for 6 minutes, flip, then cook for an additional 6-9 minutes until internal temperature reaches 165°F (74°C).
  • Remove and serve with your favorite dipping sauces.

Notes

Ensure chicken reaches 165°F for safety.
