Ingredients

Chicken

  • 1 pound chicken breast

Breading

  • 1/2 cup brown rice flour
  • 1 tablespoon tapioca flour
  • 1/2 teaspoon baking powder

Eggs

  • 2 large eggs

Seasonings

  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder

Instructions 

  • Mix all seasonings and divide into two parts.
  • Combine rice flour, tapioca flour, baking powder, and half of the seasoning.
  • Whisk eggs in a bowl and set aside.
  • Heat oil in a pan over medium-high heat.
  • Season chicken with remaining seasoning, dip in eggs, coat with flour, then fry until golden. Finish in oven if needed.
